weirdo delight

i remember this dessert from the potluck sweets table of my childhood. it was a mystery to me then who brought it - i suspect the same anonymous great aunt that brought the ambrosia salads - but it was the gastronomic equivalent of heaven to me. as a grown-up, i spent ages searching for a recipe. eventually i tracked one down. i'm not sure what it's officially called, but "weirdo delight" is what i call this combination of ingredients:

125 ml / 1/2 cup of butter (i use a 1/4 cup - the "diet" version? ha.)
250 ml / 1 cup smooth peanut butter (the fake kind)
1 300g package of butterscotch chips
1 normal-sized package of coloured marshmallows

melt the first three things together over lowish heat. let them cool off for a quick minute and then stir and add in the marshmallows. nothing says a '70s dessert more than emptying bags of chemically ingredients into a pot. stir it up and pour into the pan of your choice. i use an 8" square pan but silicone muffin cups would be cool too (and what a cool stripper name). keep them in the fridge.

these are really, really awesome. of course you must like sugar, because they do have a lot of that. i usually only make them at christmas (why then, i don't know) and i used to be kind of mortified to put them on a platter with fancy cookies - they seem so low-rent. but they're always the first to go. guess folks can't resist the lure of the weirdo delight.
